TASTING NOTE:
Over the past 16 years - I have been in France looking at the harvest in most of the wine regions, though in 2007 I didn't quite make it to Chablis, but I was in the south of Burgundy, which enjoyed a similar finish to the vintage. The harvest took place with good weather and without a single drop of rain for Laroche. The fruit was picked ripe, the juice, and the aromas were fine and precise and with good acidity. 2007 has produced a fine and true style Chablis wine.
The whole bunches were pressed in a pneumatic press, and then let to settle for approx 12 hours at 12C to 15C. Fermentation took 15 days at 16C in stainless steel tanks. The wine went through 100% Malolactic fermentation. Maturation for this wine was 4 to 6 months on lees in stainless steel. The wine has had minimum filtration to preserve the maximum natural character of the wine, then bottling under low pressure on a bottling line designed to protect quality and under screw-cap.
In the glass you are greeted with a brilliant yellow colour. On the nose you have a crisp, fresh and mineral bouquet. The palate is refreshing, smooth and harmonious with notes of apple, pear and hints of mineral notes on the clean finish. Serve at approx 10-12C.
CELLARING POTENTIAL:
Drinking perfectly well this summer; and throughout 2010.
