TASTING NOTE:
I had the pleasure of going through a 'Vin-Clair' tasting with Regis in June of this year at the new cellars of Piper Heidsieck. To be able to sit with one the best Champagne makers in the world and talk through all the different nuances of each vineyard (over 100 that they source from) and how each will support and blend with the other was to say the least - one of the best days' in my wine tasting career.
This wine has been called audacious, contemporary, elegant and playful, and that is even before you take a sip. This Rose Sauvage is unlike any other rose champagne. This is a rose champagne made through assemblage in accordance with the strict regulations of the Champagne region. The dynamic, vibrant colour in the glass is obtained through a significantly higher proportion of Pinot Noir vinified as red wine before being added to the blend before secondary fermentation. Then a careful 24 months of aging in the cellars complete the magic.
On the nose you have an abundance of fresh red fruits, especially Morello cherries. Subtle notes of mandarin and grapefruit combine with hints of cinnamon and figs. The plate is lively and warm with characters of red plums; clementine's and blood orange - and just a touch of pistachio.
CELLARING POTENTIAL:
Drinking perfectly well this coming spring; and summer season.
