TASTING NOTE:
I talk a lot about 'Terroir' - and this wine is no exception, in particular the soil that Mont Redon has is exceptional. A key feature are the large rounded stones and pebbles known locally as 'galete' which retain part of the daytime Provencal heat and then slowly radiate it to the vines during the evening. In places this layer of stones is two metres deep and beneath it there is a layer of firm clay.
All hand-picked, which enables the team to select only the best grapes. After complete de-stemming, the grapes were macerated and punched down for two to three weeks to ensure maximum extraction of tannins and colour. Once the malolactic fermentation was completed, half of the volume was placed into Burgundian barrels the other half was kept in vats. Following careful selection of the best wines in the cellar a final blend was formed, which was bottled at the Estate about eighteen months after the harvest. Once the wine was in the bottle, it rested for at least four to six months before release.
A bright and deep colour in the glass. An intense nose of dark berry, licorice, plums and toasty notes. The palate is round even if the tannins are still youthful, this vintage is rich and well balanced. Finishing long and with personality.
CELLARING POTENTIAL:
Drinking perfectly well this winter, and will repay another 4-5 years in the cellar.

Perfect wine match with lamb, pork, duck and seasonal vegetables, with herb seasoning, enjoy.
