TASTING NOTE:
There are few words in the English language that can guarantee to put a smile on one's face and create images of mystery, excitement and celebration than the word Champagne. Just saying the word makes your lips smile and they start to be poised for that first sip.
This 'Blanc de Blancs' is vinified from 100% Chardonnay grapes selected from only Grand Cru vineyards (many owned by Pol Roger) in the Cote des Blancs region: Cramant, Le Mesnil, Oger, Avize and Oiry.
With the fruit from only one (obviously exceptional) vintage to work with, this is an even more difficult achievement than it is with a Non-Vintage, but they is no-one more qualified than Dominique Petit to achieve consistent excellence in the art of Champagne. Exquisitely balanced, with elevated floral and fruit characters underpinned by a stable and consistent nuttiness and toastiness, largely derived from the seven long years resting and maturing on yeast lees.
The bouquet has a fragrant chalky lemon and greengage plum character that gives a racy feel to the nose. On the palate - balance is the key here, between bold, attacking fruit flavours and delicacy, between a bright, vivacious mousse and a surge of rich Chardonnay finesse on the palate. Layers of flavour combined with the flint and mineral freshness all add to the complexity. Treat yourself.
CELLARING POTENTIAL:
Drinking perfectly well now and will give pleasure for another 3-5 years.
SUGGESTED FOOD MATCHES:
Perfect as an aperitif and matched with sushi, oysters, goat's cheese, gently flavoured white fish and vegetables.
Please don't serve too cold: 8-10 degrees.
