TASTING NOTE:
This is a unique blend of Cabernet Sauvignon and Carmenere, the long lost French varietal, disappearing nearly completely in Bordeaux due to phylloxera in the late 1800's, which was re-discovered in the last decade, growing almost wild in Chile.
Aurelio Montes considers this blend a real achievement, showing Carmenere at its best.
Deep dark ruby red in the glass, it has a very elegant aroma with notes of chocolate, cigar box, ristretto coffee and also a hint of vanilla and butterscotch. On the palate it is full, medium body, soft mid-palate and generous with a lingering finish.
I would recommend decantering this wine for at least 30 minutes before serving with good food and friends that are looking for a wine to listen too. If they are patient and willing to let the wine do all the talking, you and your friends taste buds are in for a treat.
CELLARING POTENTIAL:
Starting to show now and will mature well over the next 5-7 years.
SUGGESTED FOOD MATCHES:
Roast lamb, chicken, steak, and works well with most wild game.
