TASTING NOTE:
As with many enthusiastic wine drinkers around the world, over the past few years, we have been re-uniting ourselves and our taste buds with this exciting fortified wine, Pedro Ximenez. Yes - that is correct, we don't even utter the name Sherry in the same breath. As this wine is a far removed as you can be from any past experiences you may have had with Sherry made in New Zealand or anywhere else in the world.
Made from the Pedro Ximenez grapes, once harvested, they are left out on mats in the sunshine for up to two weeks. This causes the water to evaporate from the grape turning it into a raisin, the sugar level rises so that when matured using the "Solera and Criadera' system you develop a rich and intensely flavour fortified wine. Aged over 12 years in casks of American oak before bottling.
The glass is filled with a shiny and intense mahogany colour. The bouquet has deep aromas of dried fruits, raisin, figs and very elegant hints of chocolate and coffee.
The palate is complex, rich and velvety. Full of dried fruit flavours, very smooth with a long lingering after taste.
