TASTING NOTE:
The 2007 vintage conditions demanded delicate handling of the Chardonnay fruit, which Malcolm has enhanced by a long cool fermentation in 100% stainless steel for most of the fruit, with full barrel fermentation for select portions followed by a very long malo-lactic fermentation with extended lees contact. 
The nose shows taut minerality with notes of lemons, peaches, limes and poached nectarines. The palate continues with more peaches and cream, a soft food-friendly texture on the mid-palate and elegant length and structure. This wine is on the lighter shade of fruit intensity, showing hints of Chablis wine making influences. As with all wines, best enjoyed with food.
CELLARING POTENTIAL:
Drinking now, yet will repay those with patience in another 3-4 years.
SUGGESTED FOOD MATCHES:
This wine pairs well with most white meats and even a cold turkey sandwich on boxing day.
