TASTING NOTE:
After a warm winter and good spring rains, a drier vintage provided perfect growing conditions for harvesting healthy ripe fruit. Consistent berry set and a mild summer meant that the Cabernet fruit displays concentrated colour and flavour making this vintage one of their best ever. After fermentation and gentle winemaking, the wine was placed into American Oak hogsheads for 24 months maturation, then given time to rest in bottle before release.

In appearance this wine is a very deep red with youthful purple hues. On the nose you find aromas of intense varietal characters of ripe berries, black olive, mint and herbs with subtle complex oak notes in the background. The palate is wonderfully supple and fleshy with fine firm tannins providing excellent structure. Intense flavour, good length and well balanced acidity complete this outstanding wine which will evolve and develop further with bottle maturation. A perfectly balanced Cabernet Sauvignon.

CELLARING POTENTIAL:
Drinking extremely well now, and yet will age gracefully over the next 3-5 years.

SUGGESTED FOOD MATCHES:
Perfect wine match with Prime beef, venison, lamb-shanks and roasted, herb vegetables.
