TASTING NOTE:
The vines from which the fruit is sourced are carefully cared for to maintain the lively, mineral fruit character that typifies classic Chablis. Each parcel was harvested separately over a few days as they achieved the ideal ripeness - and quickly taken to the winery to retain the lively characters.

As the harvested fruit came in - thanks to the growing season ending well, the fruit had developed elegant, aromatics, with well-balanced ripe fruit and generous mineral notes. The grapes were pressed and the must was fermented in stainless steel tank for two weeks at 16C which retained the freshness and purity. The wine went through 100% malolactic fermentation and spent nearly six months on its lees to give extra palate complexity and a smooth mouth-feel. The wine was lightly filtrated to preserve the natural body and fruit character.

In the glass you have a pale, straw gold colour. On the nose you find those fresh, youthful mineral notes that typify this bright wine. The palate is lifted and harmonious, showing crisp flavours of freshly picked apples, with subtle highlights of spring blossom - with entwined layers of those mineral characters creating a lively, dry wine, with a cleansing finish. Chill and serve at 8-10C.

CELLARING POTENTIAL:
Drinking perfectly well this summer; and will age well for another 2-3 years.
