Slow Rumba

Mount Gay Extra Old Rum is one of the world's most awarded rum brands consisting of fine Bajan single and double pot and column distillates aged from 7-15 years. This blending style gives the rum huge complexity ranging from lively dry spice characters to orange peel, stone fruit and rich cocoa, with hints of coffee and tobacco.

I love this rum neat, over ice, mixed and also in my favourite rum cocktails - so basically anytime, anywhere. However it does taste a little better in Barbados. I don't know whether it has anything to do with the beautiful environment or that it is a slightly higher ABV. Perhaps it's in fact a slight mixture of the two.

Ingredients:

60ml Mount Gay Extra Old Rum

2 x Green cardamom pods

15ml Spiced Syrup*

1 dash of Fee Brothers Peach Bitters

1 dash of Fee Brothers Orange Bitters

Method:
First crush cardamom pods in the base of a mixing glass to release seeds and flavour. Now fill with ice and add remaining ingredients. Stir well over ice and then double strain into an ice filled old fashioned glass. Zest with fresh orange peel.

*Note:
In 2 litres of water add star anise, cardamom, vanilla pod, all spice, cinnamon, cracked whole nutmeg and some orange peels. Bring to the boil then simmer on low heat until 1 litre remains. Strain - then add 1kg of sugar and bring back to the boil then add 200mls of Mount Gay Silver Rum. Reduce a little further then set aside to cool. This will last in the fridge for a long time.
