Cocktail of the Week
Mandarine Sour
13 July 2010

Mandarine Napoleon is produced using the finest mandarins sourced from the best orchards in Sicily and the South Eastern region of Spain. The mandarins are selected, graded and sorted ensuring only the finest are used before the peels are removed and dried. The dried mandarin peels are then steeped in strong alcohol to extract the essential oils.

This extraction is then distilled in a pot still to obtain a concentrate distillate. Only the finest middle cut is kept and then matured for two years in large vats. The final blending is then carried out with the addition of sugars and fine aged cognacs (minimum of six years old).

INGREDIENTS:
60ml Mandarine Napoleon

30ml Lemon Juice

2 drops Fee Brothers Bitter (Peach, Orange or Original)

1/4 fresh Egg White

METHOD:
Add all ingredients in order to a cocktail shaker. Fill with ice and shake well. Strain into a chilled cocktail glass and serve.

GARNISH:
A cherry or two (optional).
