Singapore Sling

This week I have revived Ngaim Tong Boons great "Raffles Bar'' classic the Singapore Sling. Only I've used the best Gin on the planet with the best Cherry Brandy on the planet. The Botanist Gin and De Kuyper Cherry Brandy XO - with such lavish ingredients it's only fair to follow suit with the greatest of fresh flavours. I've also used the stunning Mandarine Napoleon in place of Benedictine. I've also omitted some sweetness in this recipe leaving out orange curacao, bringing the drier flavours to the forefront.

Don't try and cheat and use bottled juices juice your own fresh pineapple buy skinning, coring and blending those little puppies followed by passing the liquid through cheese cloth. Make it fresh on the day for the best taste. No additives, no preservatives only the freshest and tastiest drink made with a philosophy in mind - only it's slipped mine. Make up your own. Whatever it is make it fantastic.

Ingredients:
45ml The Botanist Gin

10ml De Kuyper Cherry Brandy

5ml Mandarine Napoleon

60ml Pineapple Juice (homemade)

15ml Lime Juice (freshly pressed)

Dash of Fee Brothers Bitters

Club Soda (optional) / Orange or Pineapple Slice and Cherry for garnish

Method:
Chill Glass. Shake all ingredients except the soda with ice and strain into a highball glass. Top with soda if desired.

Garnish:
Garnish with the orange, pineapple slice and cherry.
