Wine of the Week
Valdespino 'El Candado' Pedro Ximenez
16 June 2016

Grape Varieties: 100% Pedro Ximenez

Growing Region: Jerez, Spain

Owner / Winemaker: Eduardo Ojeda

TASTING NOTE:
'El Candado' is Spanish for 'The Lock', and reflects the unique packaging of this decadent sherry which has the cap locked on with a small padlock. This is a homage to the myths and historic stories that surround Pedro Ximenez Sherries. So sought after, that noble families were forced to chain the barrels closed to avoid their retainers stealing a taste.

The Pedro Ximenez grapes are sun-dried for at least two weeks, concentrating the sugars and turning them into raisins. Intense mahogany in colour, this sherry has intense aromas of dried fruits, raisin and figs with subtle chocolate and coffee. The palate is rich, velvety and very smooth.
