TASTING NOTE:
Winemakers Michael Fragos and Bryn Richards craft wines that display purity of varietal typicity, characters and with a clear a sense of place. Their wines also have an excellent mouth-feel and texture as well as layered complexity.
To achieve this desired style, the grapes were carefully harvested at the ideal ripeness, with a broad array of fruit flavours. Fermentation was handled gently with the juice allowed to remain on the skins for up to 8 days to ensure optimum extraction of colour, aroma, flavour and tannin. To express the natural varietal expression and complexity only well seasoned tight grained French oak was used during the maturation process. During this period of development, the wine was regularly racked to encourage the integration and softening of the lively youthful tannins.
In the glass you have a strong purple colour with a crimson hue. On the nose this 2012 Parson's Nose Shiraz is showing lifted aromas of ripe blueberries, with cracked pepper and died spice highlights. On the palate, the wine is luscious and overflowing with cassis, liquorice and dark sweet plum flavours that seamlessly integrate with the gently textured oak and the confident tannins. The winemaking team has integrated these vibrant flavours within an opulent mouth-feel and a charismatic wine with balance and structure, giving the wine a lengthy finish. This Shiraz has 14.5% alcohol, being bottled in August of 2013, so decant for 30-40 minutes and serve at 16-18C.
CELLARING POTENTIAL:
Approachable this coming winter season; and will age gracefully for another 4-5 years.
