TASTING NOTE:
The 'Noble One' dessert wine was first created by Darren at the family winery in Bilbul, Victoria, Australia back in 1982. The 'Noble One' has gone on to be one of the most awarded wines in the world - maintaining its position as Australia's benchmark dessert wine ever since.

Selected vineyards are regularly assessed to determine the optimum harvest time for each parcel of fruit based on sugar content and the degree of botrytis. Each vineyard is hand-harvested and fermented separately at 13-15C. Fermentation can take from 3 weeks to 3 months. When fermentation is complete, the wine is clarified, stabilised and transferred to either oak barrel or tank. Most of the parcels are matured in French Oak barriques, 33% in new and 44% in one year old oak for 10 - 12 months with the remaining 23% left unoaked.

In the glass you have a bright golden colour. On the nose there are scents of citrus, quince, ripe nectarine and apricot complemented with hints of well integrated vanillin oak. On the palate the wine is rich and luscious with layers of flavour including apricot, peach, citrus and subtle French oak. The wine is full, vibrant and finishes with a balanced tang of acidity. Chill and serve at 8-10C.

CELLARING POTENTIAL:
Drinking perfectly well this summer season; and will cellar for another 8-10 years.
