TASTING NOTE:
Pask have their vineyards located on Gimblett Road - where they were the first to plant in the region now known as Gimblett Gravels.
With their vineyards being sheltered from the prevailing winds by the landmark Roy's Hill, hot daytime temperatures coupled with the warming effects of the stony soil produce grapes of intense flavour. The 'Declaration' range of wines is only ever produced in exceptional vintages and is harvested from selected vines. In 2007 a fine, warm, Indian summer was experienced in the Hawke's Bay, where small parcels of fruit achieved full maturity - producing exceptional flavours.
After harvesting - the fruit underwent cold soaking along with a warm fermentation on skins and some barrel fermentation - producing a complex Merlot. Aged in new oak - lees contact has added weight and texture to this layered wine. 18 months in new oak has ensured only the best is represented in the wine. As you pour the wine, in the glass you have a deep garnet colour. On the nose ripe plums and brambles, a touch of mocha coffee and subtle fruitcake notes. Soft tannins and integrated oak combine with a soft earthiness. The palate is inviting and ripe, with blackberry fruits, savoury notes and a hint of spicy characters. With bottle age - the velvet tannins are supported by honest fruit and fine oak resulting in a smooth finish. Decant for 20 minutes and serve at 16-18C.

Drinking perfectly well this summer season; and over the next 18months.
