Lemon & Honey Gin Fizz

Ingredients:
50ml The Botanist - Islay Dry Gin

20ml House made Honey and Lemongrass Syrup (with a touch of lemon zest and fresh ginger)*

15ml Freshly Squeezed Meyer Lemon Juice

7.5ml Fresh Squeezed Lime Juice

1/2 tsp castor sugar

10ml Fresh Free Range Egg White

Sparkling Mineral Water to top

Method:
Add syrup, sugar and juices to an empty Boston shaker. Dry shake well (shake without ice). Re-open shaker and add The Botanist and touch of egg white, Fill with ice and shake good and hard for 10 sec. Strain into a tall ice filled glass and top slowly with sparkling water.

Garnish:
Garnish with a lemon slice and a fresh cherry.

*Bring to the boil crushed lemongrass stalks, zest of 1 lemon, and 2 tbsp fresh grated ginger to 1 litre of spring water. Simmer for 2 min then remove from heat and leave to infuse. Once cooled slightly strain the liquid and add 600g of white sugar. Return to heat, reduce liquid to consistency required.
