Rickeys are traditionally dry drinks, but syrup or sugar can be added. The Rickey took its name from "Colonel Joe" Rickey, a lobbyist in Washington who regularly drank with members of congress in Shoemakers Bar. The barman who invented the drink let Colonel Joe taste it, and when the Colonel ordered another, he christened it the Gin Rickey. Oddly enough, Colonel Joe later became the first major importer of limes into the U.S.A.
Ingredients:
45ml Hayman's London Dry or Old Tom Gin
15ml Fresh Lime Juice
150ml Club Soda
Lime wedge or wheels for garnish
Method:
Fill a highball glass with ice and add ingredients. Stir well and serve.
Garnish:
Garnish with lime as desired.
