This cocktail is a prime example of a delicious island style rum drink. It has a long standing pedigree in bars all across the Caribbean and U.S. I thought I would squeeze it in before winter lays down her bitter and biting anchor. Ingredients:
30ml Mount Gay Eclipse Silver Rum
30ml Mount Gay Eclipse Gold Rum
60ml Fresh Pineapple Juice
15ml Fresh Lime Juice
30ml Sugar Syrup
1/2 small free range egg white
Dash of Fee Brothers Original Bitters
Dash of Fee Brothers Peach Bitters
1 Lime wedge
Method:
Muddle lime wedge in a Boston mixing glass to extract oils. Add remaining ingredients. Fill with ice and shake very well. Strain into a large ice filled highball glass.
Garnish:
Garnish as desired.
