Strawberry & Coconut Daiquiri

Don't let terrible mass produced frozen Daiquiri's from machines and 80's retro dance floors put you off blended drinks nor blended Daiquiri's for that matter. Not at least until you've tried this. It is key to use a very good blender, add 3.5 times the volume of ice to liquid (a lot) then a good 30ml of sugar syrup to bring the flavour forward through the ice-water-dilution.

Always add some fresh ingredients and always squeeze citrus juice to order, this will guarantee freshness of flavour with no wastage. Make sure you add the ice at the last second before blending and then blend on high speed until smooth. This method will give you great consistency of texture and colour and most importantly flavour.

Ingredients:
45ml Mount Gay Eclipse Silver Rum

15ml De Kuyper Coconut

30ml Sugar Syrup

30ml Lime Juice

2 large strawberries

Method:
Add all ingredients to a blender. Add 1 level mixing glass and 1 level small scoop of ice. Blend on high speed until smooth. Carefully spoon mixture into chilled Daiquiri glass.

Garnish:
Garnish with strawberries or sliced dried coconut.
