Asian Spring Sour

Asian Spring Sour (Kiwifruit and Kaffir Lime Daiquiri) - Like a lot of good things some of the best drinks happen without warning. I was conducting a training recently demonstrating the versatility of the Daiquiri recipe, which I love for its taste and simplicity. After explaining the classic side of the drink I always show a more complex version - basing the formula around fresh produce available. I have always made a kiwi and kaffir lime daiquiri but this day was feeling a little more adventurous - adding a hint of coconut and star anise.

With great success it must be said. Mount Gay Silver Rum has the complexity in the spirit, due to a very long aging process (for white rum), to carry through the strong flavours of kaffir lime and anise. The De Kuyper Coconut Liqueur is an exquisitely made liqueur bursting with fresh fruit and nut character and rounds everything off leaving a tropical hint.

Ingredients:
50ml Mount Gay Eclipse Silver Rum

30ml Fresh Lime juice

15ml Sugar Syrup

10ml of De Kuyper Coconut Liqueur

1/2 large peeled Kiwifruit

Small amount of fresh Kaffir Lime Leaf

Small pinch of Star Anise powder (optional)

1 pod of Star Anise for garnish

Method:
Add lime leaf and sugar syrup into a mixing glass and bruise lime leaf. Add kiwi and muddle well. Add egg white to shaker and dry shake (without ice). Add remaining ingredients, fill with ice and shake very well. Fine strain into a chilled cocktail glass.

Garnish:
A pod of Star Anise.
