I have wanted to make this cocktail for a long time and finally got around to it and perfected it a few weeks ago at a good friends wedding. Making fresh syrups is a fun and easy way to get delicious natural flavour in your drinks. It was a screaming success with the lavender flavour coming in subtly on the finish and the cocktail being as delicious and refreshing as any well made Mojito could be. It was the first be guaranteed not to be the last time I make this little beauty. Mmmm writing this on a Friday afternoon I can't think of anything more suitable to be drinking this very second.
INGREDIENTS:
60ml Mount Gay Eclipse Silver Rum
30ml Freshly Squeezed Lime Juice
30ml Homemade Lavender Syrup*
One handful of Fresh Mint Leaves
Sparkling Mineral Water
Method:
In the base of a highball glass add lime juice, lavender syrup, mint leaves and a touch of sparkling water. Stir well to mix. Fill glass with ice and add Mount Gay Silver Rum. Stir well again. Top glass with more ice and finish by topping with sparkling mineral water.
Garnish:
Garnish with a lavender stem and a lime wedge and mint sprig (optional)
*Add a large amount of fresh destalked lavender flower heads to boiling water and simmer gently over heat for a few minutes. Remove from heat and leave to steep. Strain liquid and bring to the boil with equal quantity of white sugar, cool and bottle.
