Where new meets old and sweet meets sour - let me introduce you to 'The Bailey Cocktail'. Passionfruit juice can be a little hard to find but well worth the hunt. I use the Dewlands brand - they have a fabulous array of tetra packed juices. The heavy, dry elegance of Hayman's London Dry Gin is the perfect base to countless cocktails and is lifted here with the dry and fresh aromatics of Dolin Vermouth rounded of with a hint of mandarin and passionfruit. My tastebuds are tantalizing at the thought of one of these little beuties this very minute - it must be 12 o'clock somewhere in the world.
INGREDIENTS:
45ml Hayman's London Dry Gin
7.5ml Dolin Dry Vermouth
7.5ml Mandarin Napoleon
10ml Passion-fruit juice
Dash of Grenadine
METHOD:
Add all ingredients will a good helping of ice into a Boston shaker. Shake with enough energy so each of the flavours come alive, then strain into a chilled cocktail glass.
GARNISH:
Garnish with raspberries on a cocktail stick.
