This cocktail was inspired by the beautiful sunny day we are having here in Auckland, reminisent of the stunning weather Kerikeri and The Bay of Islands is famous for - apologies to people south of the Bombays.
The Bay of Islands is the birth place of this internationally acclaimed limoncello and home to it's creators James and Bronwyn Grigg who lived and travelled throughout Italy all the while devoloping a taste and passion for this delicious liqueur. It is very versatile as a cocktail ingredient and works particularly well with ginger.
INGREDIENTS:
30ml Lemon Z
15ml Herradura Silver Tequila
15ml Dolin Vermouth Blanc
15ml Agave Nectar
30ml Lemon Juice
45ml Feijoa and Apple Juice
1 dash of Fee Brothers Lemon Bitters
Small peeled chunk of fresh Ginger
METHOD:
In the base of a shaker muddle ginger with agave nectar. Add remaining ingredients and shake well with ice. Strain into a crushed ice filled cocktail glass.
GARNISH:
Garnish with a slice of fresh ginger and a pod of star-anise.
