Wow! What beautiful clear days we have been having in the north of late. I was lucky enough to just spend the weekend at a beautiful wedding of some friends in Whangamata. Everything was fantastic from the weather to the drinks, where we all managed to imbibe in many Mount Gay Silver Mojitos amongst other delicious treats including a seriously good sangria.
This week's cocktail wasn't available there, but would have gone down a treat. This is a basic recipe, all I have done is work with the flavours already found in Mount Gay Extra Old, one of the world's most awarded rums, lifting the rich orange and tropical fruit flavours and aromas.
INGREDIENTS:
45ml Mount Gay Rum Extra Old
15ml De Kuyper Dry Orange
Juice of 1/2 a lime
1 tsp white sugar
Large portion of Rockmelon
METHOD:
Muddle the Rockmelon, white sugar and lime juice in the base of a shaker Add the remaining ingredients then shake well with ice and strain into an ice filled short glass. glass. Top with more ice if required.
GARNISH:
With a wedge of melon.
