The Bajan Effect

This is a relatively obscure but popular combination of pineapple and pepper. Sweet, tropical and delicious with a warm peppery kick backed up with fresh lime and the smooth flavours of Mount Gay Eclipse Silver Rum finally sweetened with honey. Mount Gay Silver is completely aged in bourbon cask for two years before charcoal filtration to remove the colour. It also contains considerably more pot distillate than any of its competitors. Mount Gay Silver is made to mix so please try this delicious cocktail anytime day or night.

INGREDIENTS:
60ml Mount Gay Eclipse Silver Rum

5-6 fresh pineapple chunks

8-10 black pepper corns

30ml fresh pineapple juice

15ml fresh lime juice

30ml honey water (1:1 honey + water, warmed up to liquid then cooled)

Splash of club soda

METHOD:
Coarsely bruise the black pepper corns in a shaker, add pineapple chunks and honey water and muddle. Add Mount Gay Eclipse Silver Rum, pineapple juice and shake hard over ice. Double strain into a chilled cocktail glass. Top with a splash or two of soda.

GARNISH:
Garnish pineapple leaves.
