For this cocktail I've used el Jimador Tequila, crafted from a natural production process with 100% Agave resulting in a smooth, clean finish. The name el Jimador originated in honour of the men who harvest the Mexican grown Agave with great pride and care, referred to as 'Jimadors'. This task requires the skill of selecting perfectly ripe Agave, which take between 8 and 12 years to develop.The clean agave flavours of the tequila complement the kiwifruit tones perfectly in this cocktail.
INGREDIENTS:
60ml el Jimador Blanco Tequila
Whole egg white
30ml Sugar syrup
Dash of De Kuyper Kiwifruit
Small piece of Ginger
Half a Kaffir Lime leaf
Small piece of Lemongrass
Half a Kiwifruit
METHOD:
Muddle Ginger, Lemongrass and Kaffir Lime Leaf in a Boston Shaker - add 1/2 a Kiwifruit and muddle again. Add remaining ingredients and shake well with ice, strain into a tall glass filled with ice. Top with Soda water.
GARNISH:
A piece of lemongrass to garnish.
