The ever-popular mojito is based on a drink formula of Aguardiente (a crude forerunner of rum), lime, sugar and mint served on her Majestys Royal Fleet and called 'The Draque' (pronounced drake). This drink was said to have healing properties and would help ward off scurvey in the tropics - especially after drinking a pint at 9am which would have been common. Mount Gay Eclipse Rum comes from Barbados and is the worlds oldest rum. The brand has very strong ties with the sailing community and it is said that 300 years ago sailors would have to bring back a barrel of Mount Gay rum (Mt Gilboa Estate) when venturing to the 'New World' to prove they had been there - as Barbados was at the heart of the Carribbean. Mount Gay Eclipse is a light-bodied rum (Continuous and Pot distilled) which can be enjoyed served in any fashion - mixed, on ice or neat.
INGREDIENTS:
60ml Mount Gay Eclipse Rum
A few bunches of mint
Juice of one lime
Soda Water
Sugar Syrup
METHOD:
Add Mint, Sugar Syrup, Lime Juice to a tall glass with a good wave of Soda Water. Stir well to extract all flavour but keep mint leaves intact. Half fill glass with ice and add Mount Gay Eclipse. Stir lightly. Top glass with ice and add a wave more soda.
GARNISH:
A Sprig of mint.
