INGREDIENTS 6 CUPS CHRISTIAN DROUIN BRUT CIDER 1 STICK UNSALTED BUTTER 1/4 CUP DARK BROWN SUGAR 1 TEASPOONS GROUND CINNAMON 1 TEASPOON GROUND NUTMEG 1/4 TEASPOON GROUND CLOVES 1/4 TEASPOON GROUND ALLSPICE 2 CUPS MOUNT GAY ECLIPSE RUM JUICE OF HALF A LEMON CINNAMON STICKS FOR GARNISH SALT TO TASTE INSTRUCTIONS IN A MEDIUM POT BRING THE APPLE CIDER TO A BOIL OVER MEDIUM/HIGH HEAT THEN IMMEDIATELY TURN THE HEAT ON LOW AND ALLOW THE MIXTURE TO SIMMER. STIR IN BUTTER, BROWN SUGAR, CINNAMON, NUTMEG, ALLSPICE, CLOVES AND A PINCH OF SALT. CONTINUE TO STIR UNTIL THE BUTTER IS MELTED AND THE SUGAR IS DISSOLVED. IF THE SUGAR ISN'T DISSOLVING, WHISK THE MIXTURE. REMOVE THE MIXTURE FROM THE HEAT AND ADD IN RUM AND THE JUICE OF HALF A LEMON. LADLE THE HOT RUM BUTTERED CIDER INTO MUGS AND GARNISH WITH A CINNAMON STICK.
