Tamarind Margarita

Recently I visited the most amazing distillery in Mexico, if not the world. Casa Herradura was built in 1870 as a purpose state of the art distillery and to this day Herradura is the only 100% hacienda made 100% agave tequila on the market. This means all the processes from planting and growing the agave to cooking, fermenting and distilling is done right on site. There really may not even be another distillery in the world that has such control over all the processes of production.

In the case of this amazing distillery no words can really explain the quality driven production and facility location. Seeing - really is believing. So next time you are booking a ticket overseas make Guadalajara, Jalisco your first choice. This is also the site where el Jimador is made, still the number one selling tequila in Mexico. When you get there ask for one of these little beauties.

Ingredients:
60ml Herradura Plata Tequila

30ml Fresh Lime Juice

45ml Tamarind Puree*

*Make lightly spiced sugar syrup using half sugar and water and a mixture of your favourite fresh spices; like star anise, cinnamon and a hint of nutmeg. Then blend this mixture half and half with Tamarind paste or similar.

Method:
Shake all ingredients well with ice in a Boston shaker and strain into a chilled cocktail/ margarita glass with a chilli and lime crust rim. Or strain into an ice filled chilli and lime rimmed old fashioned glass.
