TASTING NOTE:
The 2007 Larose is dark and dense, you would think your knife and fork could stand up in the glass, it looks that intense.
After breathing the wine in your glass - the nose is generous exhibiting ripe berry fruit, cassis and French oak with hints of sweet mint, and sumptuous dark chocolate notes. There is a brooding complexity lingering beneath the bright primary fruit, supplementing the bouquet with spicy earthy notes. Sounds like a small village could hide in this glass and survive for a year on the bounty of flavours.
Then with a deft touch the aroma leads faithfully on to the palate which is flooded with rich black fruits, liquorice and well integrated oak. The customary ripe tannins are well balanced by fine acidity and the astute use of oak enhances the overall structure of the wine.
The 2007 vintage is a traditional model of Larose, typical in its balance between power and elegance. Still learning though how powerful and imposing a wine it will one day become, as it learns to use all of its character and personality to bring a meal, occasion and an evening to life. Not a wine to be rushed.
CELLARING POTENTIAL:
Drinking - if you really wish to enjoy this summer, please Decant for at least 45 minutes and then serve in the correct Riedel Stemware; or cellar for 12-15 years.
SUGGESTED FOOD MATCHES:
Perfect wine match when ready, with game meats, rich cured dishes, wine reduction sauces and matched with fresh herbs, vegetables and time to enjoy.
