TASTING NOTE:
If you haven't had the pleasure of visiting Italy as yet, if you can - I would make it a priority. It is only when you visit a place for yourself, that you can truly understand and then appreciate the subtle nuances of any culture, cuisine and in this case a glass of Italian wine. September just gone, I caught up with Giovanni to taste the current vintage and to sample a few wines, both in barrel and bottle.
This wine has had traditional red wine vinification, with maceration on the skins at controlled temperature. Soft pressing of the berries, to avoid the discharge of bitter tannins, and slow development thereby providing deeper colour. Once the alcoholic fermentation was over, the wine spontaneously carried out malolactic fermentation for 20-25 days. The wine was then assembled and fined for 6 months before bottling.
In the glass the wine has a deep ruby red colour tending towards garnet. A full-bodied wine with intense fruity perfumes, with soft, supple tannins and a long finish. Sangiovese, an Italian summer captured in a bottle.
CELLARING POTENTIAL:
Drinking very well now, plus will age for another 3-5 years.
SUGGESTED FOOD MATCHES:
Excellent with Mediterranean specialties such as rich pasta dishes, grilled fish & red meat.
