TASTING NOTE:
Only the best parcels of Clare Valley Shiraz were selected and blended to create this Covenant Shiraz. Over the years, the Clare Valley has produced some of the most sought after Shiraz wines in the world. Hand picked fruit was selected from six unique vineyard sites in the Leasingham Valley with each being fermented separately, basket pressed and then aged for 22 months in a combination of new and older French and American oak barrels. The colour is an intense, inky / crimson red with distinct youthful, purple hues. The wine shows intensely varietal lifted aromas of black olives, spicy plums and smoky oak characters. A great example of a full-bodied Clare Valley Shiraz, the palate is richly layered and textured. Chocolate and plum fruits create palate sweetness and the French and American oak integrates well and supports these notes, providing seamless length and the wine has a wonderful lingering finish.
CELLARING POTENTIAL:
Approachable now, but will age nicely over the next 12 years.

Perfect with barbequed venison sausages, beef kebabs and grilled peppers.
