Chapel Hill 'Parson's Nose' Shiraz 2013

TASTING NOTE:
Michael and his team understand their vineyards, always looking to use minimal winemaking intervention - allowing the fruit and terroir to have its own voice. This Shiraz showcases the delicious varietal characteristics that were developed in the vineyard during the season and nurtured during the winemaking. The result is a wine that has rich flavours an opulent mouth-feel and firm tannin structure giving palate length.

Each chosen parcel was strategically harvested to avoid any overripe, tired or jammy fruit flavours. Each parcel then underwent a gentle fermentation with time of skins lasting nearly 8 days to ensure optimum extraction of fruit flavours and tannin. Following gentle pressing the free run juice and pressed parcels were combined and placed into well seasoned tight grained French oak barrels for maturation. During maturation the wine was regularly racked to encourage the integration and softening of the expressive, youthful tannins.

On the nose this 2013 'Parson's Nose' Shiraz displays vibrant aromas of blueberries, cassis berries, whole black pepper-corns and dried spices. Already this wine has integrated well, showing is luscious palate, overflowing with both sweet dark plum flavours, dark berries, star-anise, oak notes and toasted spices which all seamlessly integrate to produce a wine with firm tannins and a rich, textural mouth-feel and a persistent length to the finish. Decant for 30-45mins and served at 16-18C.

CELLARING POTENTIAL:
Drinking well this coming season; though will also repay another 5-7 years.

SUGGESTED FOOD MATCHES:
Perfect wine pairing with lamb-shanks, shredded beef served with earthy vegetables and a wine sauce, enjoy.
