Waipara Hills 'Waipara Valley' Riesling 2014

TASTING NOTE:
Waipara Hills are one of the most outstanding and consistent exponents of Riesling in New Zealand. The fruit for this wine was sourced entirely from 'The Mound' vineyard in the Waipara Valley, where the vines are planted on mixed clays and soils which adds complexity to this wine.

The different parcels of fruit were harvested primarily in the morning or at night - and then on arrival into the winery were pressed immediately to preserve the fruit flavours. No sulphur was added to promote some colouration, and rested for a short period to soften phenolics. The juice was left to settle until it appeared clean, racked and then gently warmed to invigorate a range of selected yeasts chosen to develop palate texture. After fermentation the wine was left on its lees for three months, and stirred weekly to keep the wine fresh and promote palate characters. Finally each of the parcels were tasted then blended, fined and finished ready for bottling.

As the wine fills your glass, you are greeted by a bright pale green colour with a citrus hue. On the nose this wine is bursting with citrus aromatics, along with rock melon, floral notes and a touch of lemongrass and white honey. These characters and flavours carry onto the generous palate - which has a heart of mixed citrus flavours and a touch of white honey which fills the mouth and the balanced natural acidity of residual sugar results in both a persistent and refreshing finish. Gently chill and serve at 7-9C.

CELLARING POTENTIAL:
Drinking perfectly well this summer season; and through until the end of 2016.

Perfect wine pairing with fresh shellfish, fish cakes and a citrus dipping sauce and a summer salad, enjoy.
