Wine of the Week
Domaine Laroche 'Saint Martin' Chablis 2013
29 December 2014

Grape Variety: 100% Chardonnay

Growing Region: Chablis, France

Chief Winemaker: Gregory Viennois

TASTING NOTE:
The cuvee Saint-Martin is actually a blend of the best parcels of Domaine Laroche in the Chablis appellation across 60ha of vines. Each site is located on Kimmeridgian soils and these varied aspects provide numerous nuances, along with a richness and complexity found in the final wine. Hand harvesting and sorting were crucial for quality during what was a demanding 2013 growing season. All these elements and conditions enabled the development of elegant aromatics, well-balanced fruit and mineral notes in the wine.

When each parcel was ripe, whole bunches which were placed into a pneumatic press; the juice was then allowed to settle for approximately 12 hours in specially designed, wide tanks in order to increase the natural sedimentation. The juice then underwent 21 days of fermentation at 17C in tanks and then 8 months on fine lees. The wine had minimal filtration to preserve the maximum natural character of the wine.

In the glass you have a pale gold colour with a shining hue. The personality and character of this wine comes directly from the fruit parcels and not from any oak. The flavour profile has a powerful fruit expression and a rich aromatic nose, both typical of the Laroche style. The wine has a vibrant nose with hints of ripe, white pip-fruits and floral notes. These carry through onto the palate which has a balanced richness and freshness from its natural zesty acidity and mineral seam - resulting in a lingering refreshing finish. Chill and serve at 8-10C.
