TASTING NOTE:
This Champagne is sourced from a one-hectare parcel owned by Salon: known as 'Salon's garden', and from 19 other smaller parcels in Mesnil-sur-Oger, originally chosen by Aime Salon at the beginning of the 20th century. The wines are aged for an average of 10 years, gaining complexity and finesse.

This wine has a perfect balanced of feminine and masculine characters, along with its natural audacity giving it an alluring personality. Salon par excellence, with its chalky minerality, waves of floral scents, subtle notes of brioche, a firm hit of acidity and seemingly endless elegant bubbles. The 2002 harvest began in mid-September, with the chardonnay grapes at just the right yields, a reflection of their terroir, with each berry being rich and powerful.

While approachable now, it retains a youthful spirit and energy, and a youthful grace that will never fade. Salon is a masterpiece of balance and elegance, exploding like fireworks on the palate in a blaze of pale gold, with the faintest lime shimmer. The nose is complex, with blossom and the merest hint of honey-dew and lifted citrus notes. This complexity increases on the palate with those aromatic characters along with a mineral seam and subtle spice. It is full bodied though retaining is natural agility, lightness and freshness. The palate is incredibly fine, long and focused, packed with energy yet restrained and poised and its gloriously long finish. Chill gently and serve at 10-12C.

CELLARING POTENTIAL:
Drinking perfectly well this summer season; and over the coming 10-12 years.
