Fontanafredda 'Barolo' DOCG 2007

TASTING NOTE:
Danilo and his winemaking team blend tradition and innovation, with experience and modern technical - to ensure each parcel retains its unique personality and expresses each vintage respectfully. The 2007 vintage was a warm, dry year in Piedmont, with Danilo having ripe, healthy grapes from the hillside vineyards. Traditional fermentation was carried out for an average of 8-10 days in stainless steel tanks at controlled temperatures of 30-31C with the cap frequently pumped over. The 'must' is then left on the skins for several days to optimise the extraction of the polyphenolics and to help the malolactic fermentation get underway.

The wine was aged for at least 2 years in large oak casks, sourced from Slavonia and France, followed by 12 months further development in the bottle before release. The result of this lengthy ageing, has crafted a complex, full-flavoured and well balanced wine with good structure and capable of withstanding the tests of time.

In the glass this Barolo has a dark cherry colour with garnet highlights which have started turn with time. On the nose the wine has a vibrant and energetic bouquet, packed with intense dark fruits, with typical hints of wild flowers, dried spice and earthy notes. All held nicely together by the wines fine soft tannins and well integrated oak. On the palate the wine has a warm and inviting character, with a smooth texture and a lingering well-balanced finish. Decanter for 30-45 minutes and serve at 16-18C.

CELLARING POTENTIAL:
Drinking perfectly well this season; and will age gracefully for another 4-5 years.

Perfect wine pairing with a classic mushroom risotto, roast lamb or pasta with a meat ragout, enjoy.
