This family of short drinks was most popular for its Brandy & Gin variations in the United States at the end of the 1850s.Your choice of spirit, sugar, lemon juice, egg white, and seasonal fresh fruit. This is an awesome type of drink and something I often replicate and adapt. The possibilities are endless.
Ingredients:
75ml Mount Gay Eclipse Silver Rum
30ml Lime juice
1 teaspoon (5 grams) of caster sugar
2 teaspoons (7.5ml) of water
1 fresh cherry
1 lime slice
Fresh summer berries
Method:
Measure and add the sugar, water and lime juice in an old fashioned glass. Stir contents well with a stirrer or spoon. Add cherry and berries and muddle into mixture. Fill glass with crushed ice. Measure and add the rum and stir ingredients together again. Fill glass with more crushed ice.
Garnish:
Garnish with a blackberry.
