Mount Gay Rum comes from Barbados and is the world's oldest rum. Mount Gay Eclipse Silver is a light-bodied and flavoursome rum which is continuous and pot distilled and 100% aged for 2 years. It is the perfect rum for mixing and makes an absolutely delicious Mojito. For this version I simply muddle fresh blueberries in the early phase of the drink to lend loads of colour and flavour. With all the fresh lime juice, mint and blueberries in this drink it is a very healthy and full of antioxidants and vitamins. Believe me - drink as many as you like (responsibly of course) as there will be a hangover free morning tomorrow.

INGREDIENTS:

60ml Mount Gay Eclipse Silver Rum

12 fresh Blueberries

A few bunches of fresh mint

Juice of one lime

Soda Water/Sparkling Mineral Water

1 tsp white sugar

METHOD:

Add Sugar, Lime Juice and Blueberries to a tall glass and muddle very well. Add Mint and a touch of Soda. Stir well to extract all flavour but keep mint leaves intact. Half fill glass with ice and add Mount Gay Eclipse Silver. Stir lightly, top glass with ice and add a wave more soda.

GARNISH:

Garnish with fresh mint and blueberries.
