INGREDIENTS:
60ml Mount Gay Eclipse Silver

30ml Fresh Lime Juice

Pulp of 1 fresh Passionfruit

1/2 small Chili - de seeded

1/2 free range Egg White

2 tsp Castor Sugar

Club Soda

METHOD:
In the base of a shaker glass add chili and sugar. Muddle well. Add remaining ingredients,adding egg white last. Once the egg white has been added quickly fill shaker with ice and shake long and hard. Strain into a large ice filled highball glass and top with soda water.

GARNISH:
WIth a sprig of mint.
