This is a fantastic drink created by a walking almanac and perfect gentlemen of bartending; Ben Simpson, from Motel Bar in Wellington. This simple and absolutely delicious combination is a must try anytime.
INGREDIENTS:
60ml Mount Gay Eclipse Rum
1/3 Egg White from a Free Range Egg
Dash of Sugar Syrup
Juice of Whole Lime
1 x Large teaspoon of Marmalade
METHOD:
Shake all ingredients in a Boston shaker, strain into a chilled cocktail or sour glass.
GARNISH:
Dash bitters.
