Lemon Z Splice

To make Lemon Z Limoncello - only lemons grown around the township of Kerikeri in the Bay of Island are used. Only the peel from the lemon is used, soaked in pure spirit to release its flavours and aromas. The spirit is blended with waters from Waikimihia (which in Maori means 'search for water'). An ancient spring near Kerikeri, it was used by the Maori for generations. The purity of the water is exceptional - even by New Zealand's standards. The spirit is mildly blended with fine sugars.
INGREDIENTS:
2 parts Lemon Z
2 parts Pineapple Juice
1 part Coconut Cream
METHOD:
Simply shake or blend all the ingredients together.
GARNISH:
A small segment of pineapple placed artfully on the edge of the glass.
