In Paddington station in central London is a bronze statue of a bear sitting on his suitcase, waitng. This bear is Paddington Bear, with his old bush hat, battered suitcase and a love of marmalade sandwiches who, like myself has an endless capacity for getting into trouble but is always polite. As I used marmalade when creating this cocktail it seemed right to name it after two proper English icons - Paddington and the Tom Collins.
INGREDIENTS:
60ml Woodford Reserve
1 tsp English Breakfast Marmalade
Juice of 1 Lemon
Club Soda
METHOD:
Shake Woodford Reserve, Marmalade and Lemon Juice in a boston shaker hard with loads of ice. Strain into an ice filled collins glass and top with soda.
GARNISH:
Finish with a mint sprig.
