Although the exact origins of this cocktail are not known, it is believed to be a cross between the French 75 and the Honey Bee.
Ingredients:
60ml Mount Gay Rum Eclipse
15ml Fresh Lime Juice
Fresh Mint
1 teaspoon Honey
150ml Piper Heidsieck Brut Cuvee
Combine all ingredients excluding the Piper Heidsieck in a Cocktail Mixing Glass with cracked ice. Stir well before pouring unstrained into a Collins glass, before topping up with the Piper Heidsieck.
