Ingredients:
30ml Pallini Limoncello

15ml Hayman's London Dry Gin

10ml Fresh Lemon Juice

Club Soda

10 Mint Leaves

Method:
Combine lemon juice and mint in a mixing glass and gently muddle. Add remaining ingredients except the club soda; add ice, shake, double strain over fresh ice into a highball glass, top with soda.

Garnish:
Garnish with a slice of lemon and a sprig of fresh mint leaves.
