Cocktail of the Week
Tom Collins - Elderflower & Cucumber
17 September 2012

The Tom Collins is the original 'Collins' cocktail made from carbonated water, sugar, lemon juice and Old Tom Gin. First memorialized in writing in 1876 by "the father of American Mixology" Jerry Thomas.

Let's bring this great cocktail into the modern world with some lovely elderflower and cucumber flavours, which, to be completely honest - work splendidly with gin. Ok - lets!

Ingredients:
60ml Hayman's 'Old Tom' Gin

10ml Elderflower cordial

Juice of a small lemon

Large fresh slice of cucumber

Soda Water to top

Method:
Add Hayman's Old Tom Gin, elderflower cordial and lemon juice to a Boston shaker and fill with ice. Shake hard and strain into a highball filled with ice. Charge with club soda.

Garnish:
A long fresh slice of cucumber.
