Ginger Maple Caipirinha

The Caipirinha is a native cocktail of Brazil - very similar to a Daiquiri with components of strong, sweet and sour coming from the Cachaca (Brazilian sugar cane rum), fresh lime and sugar. Like the Daiquiri, the Caipirinha is a very versatile cocktail easily twisted to your own or your customers preferred taste. This original variation of mine simply substitutes the sugar for maple syrup and adds a little extra spice and zing coming from the fresh ginger. We happened to easily manage several of these drinks last Friday afternoon in the courtyard under the sun. Enjoy with friends.

INGREDIENTS:
60ml Ypioca Cachaca Ouro
1/2 large Lime
20ml Canadian Maple Syrup
1 chunk of Ginger (peeled)

METHOD:
Muddle Ginger, Lime and Maple Syrup in the base of an old fashioned glass. Make sure to Ginger is well muddled but still intact as to impart flavour but not break up small enough to be sucked up the straw. Pack glass with crushed ice and pour Ypioca Cachaca. Loosely top glass with crushed ice so it is nearly over-flowing.

GARNISH:
Garnish with a ginger slice.
